Adjust pipeline and git options after GitLab update

Description

Our GitLab got updated and this had some effects on our pipeline and used options. Changes of the update can be found here: https://docs.gitlab.com/ee/update/deprecations.html?removal_milestone=16.0&breaking_only=true.

Things that need some attention for sure:

• container_scanning (see failing pipelines)
• License stuff that was deprecated and now got removed completely
